Frozen Fruit Dessert
This creamy Cheesy Vegetable Medley features a rich, Velveeta-style cheese sauce that reheats wonderfully, making it an excellent choice for gatherings, family dinners, or potluck meals. It is THM S-friendly, low carb, and gluten free.
This dish was inspired by the cheesy California-blend vegetables often served at church dinners during childhood, but with a more homemade and grown-up twist. The result is a comforting side dish with a smooth, flavorful cheese sauce made from real cheese rather than processed products.
Although this recipe is richer and more calorie-dense than everyday meals in my kitchen, it works perfectly when serving guests or preparing food ahead of time. One of the best things about it is how well it reheats without losing texture or flavor.
I first prepared this recipe one evening while Ryan was on call at the hospital. As usual, he arrived home much later than expected. Thankfully, the vegetables held up beautifully over low heat for hours, which turned out to be a major success.
Choosing the Vegetables
For this recipe, I used a large bag of frozen Normandy-blend vegetables. Normandy blends are similar to California blends but often include squash in addition to vegetables like broccoli and cauliflower.
Many frozen vegetable mixes also contain a fair amount of carrots. Since carrots are slightly starchier than vegetables such as broccoli or squash, those following a stricter THM S approach may want to limit the amount of carrots included.
If you consume more than a small serving of carrots, the dish may fit better into an “S Helper” category rather than a pure S meal because of the higher starch content.
The Cheese Sauce
The highlight of this recipe is definitely the cheese sauce. It is creamy, rich, and reminiscent of Velveeta sauce, but with a more sophisticated flavor and made using real cheese.
The sauce is generously portioned and coats the vegetables beautifully. It is flavorful enough that I am already looking forward to using it in other recipes in the future.
This cheesy vegetable medley is especially ideal for:
-
Potluck dinners
-
Holiday gatherings
-
Feeding guests
-
Make-ahead meals
-
Comfort-food side dishes
Because the sauce reheats so well, leftovers remain creamy and delicious even the next day.
A Personal Note
I also wanted to express my gratitude for all the thoughtful responses to my previous blog post about my identity crisis. Your encouragement meant so much to me.
I’m excited to return to regular blogging and already have several new recipes waiting to be shared. After spending so much time recipe-testing for my second cookbook, I experienced a bit of creative burnout in the kitchen, but I’m finally starting to feel inspired again.
For the next month, I’ll still be busy with cookbook-related work, including editing, reviewing the design, and coordinating with the printing and distribution team to make sure everything is ready once production begins.
In the meantime, I’ll continue writing blog posts whenever I have spare moments, and after the cookbook process settles down, I hope to return to consistent blogging again. I’ve truly missed it.
If you use Instagram, feel free to follow along for more personal updates and sneak peeks of upcoming recipes. And keep an eye out for cookbook preorder details coming soon — there will be a preorder discount available as well.

How Coastal Deposition Forms Wonderful Sandy Beaches Across Our Shorelines
Coastal landscapes feature unique geographical areas known as beaches, which develop through the steady accumulation of sediment in the zones fluctuating between the daily high and low tides. These landforms typically emerge within protected environments such as inlets or sheltered coastal pockets nestled safely between prominent headlands. Whenever a significant alteration in the shape of the shoreline occurs, it slows down moving water, allowing various sediments to become trapped and gradually accumulate over long periods. When these sandy accumulations happen specifically at the innermost curve of a bay, geographers refer to them as bay head beaches.

The Unexpected and Fascinating History of Capsules
Capsules are everywhere across the globe today. Over eighteen percent of all medications use this popular delivery method. Most patients and consumers prefer capsules over other oral drug forms. Recent industry studies show that forty two percent of regular supplement users select products in capsule form. That preference rises to fifty six percent among heavy supplement users.

How To Create And Maintain Trails In Your Woods
When cold weather arrives and snow covers the ground, traditional gardening slows down or stops completely until the muddy thaw of spring returns. However, if you have woodland on your property, winter becomes a surprisingly useful time. It is an ideal season to begin shaping simple walking routes and gradually transforming them into proper trails through the landscape.
